Pumpkins, Pumpkins, Pumpkins!

This fall has been beautiful. It’s kind of drawing to a close now, and our weather is getting rainier, and the days are ending sooner. Oh well. It was pretty while it lasted!

We went to the pumpkin patch a couple weeks ago, and picked out a whole bunch of pumpkins. We got some cute little ones, as well as some large ones, much to us kids’ delight. Lulu and QB especially loved this adventure.

Ever since, we’ve been chopping and baking and freezing the pumpkins. We’ve had a delicious pumpkin soup, some baked squash dishes, and Lulu and me already made a couple batches of spiced pumpkin cookies. Mama even made pumpkin pancakes! Everything tastes so good. I’m surprised at how much pumpkin it takes to make a couple cups of mashed pumpkin, though. It makes me appreciate all the work that goes into it. There’s a lot of water that cooks out!

I’ve discovered that I love the taste of pumpkin even just by itself! Have you ever tasted a spoonful of just pureèd pumpkin? (well, aside from baby food…) I was surprised at how good it was.

  1. When we were in the Dominican Republic them served pumpkin all the time, cut in cubes and steamed as a side dish. I really love it. That’s what we did with our pumpkin this year.
